USDA inspected, quarters and sides include a mix of steaks (rib, sirloin, T-bone, flank, skirt), roasts (chuck, arm, rump, sirloin tip), ground beef, and in some quarters, a brisket. A quarter of beef after processing will normally weigh 80 to 90 pounds, and a side will weigh 160 to 180 pounds. Click the button for detailed information.
LAMB
Knowlan Family Farm now has a flock of sheep and will be selling pasture raised lamb meat on a periodic basis. The sheep are raised on pasture and hay, and occasionally receive supplemental feed. Our ewes are Katahdin hair sheep, and they are crossed with a Dorper ram.
